Description
A cheese which is seasoned for 140 days in tufa cellars on wood boards, thus allowing it to slowly season benefiting from the natural micro climate of the cellar and from the air of our hills. This cheese, once reached the optimum seasoning, is covered with Dolcetto and Nebbiolo grape must and stored into wood barrels. After about one month of refining, the Testun has acquired the scent, colour, perfume and taste of the must and wine. The Testun with juniper ash and walnut sleeves is refined in wood barrels, with layers of ash and walnut green sleeves, granting it a higher walnut taste.
