Description
This is a cheese with at least one month of seasoning. It features a raw, pressed and semi-tough paste. Its taste is fine and delicate, scented, not very spicy and sapid if seasoned. The paste is quite consistent, elastic, with very small spread and irregular holes. The colour is white or ivory. The Raschera is an excellent cheese ideal for slicing produced and seasoned without preservatives; it is also indicated for cooking, melted on risotti, vegetables and special dishes, and as such in various salads.
