A goat cheese seasoned in tufa grabens: special flask-shaped environments dug in the tufa, where special conditions of temperature and humidity create the ideal environment for the chemical, physical and microbiological transformations which, after 80-100 days of stay, make the cheeses greased, contorted and with an unmistakable aroma. The paste is friable and has a white colour, with a strong and slightly spicy aroma, also being sweet and delicate at the same time, as well as with a harmonious taste.
