Carpaccio of smoked swordfish Kg. 1/2

This is only the core of the fish slice, selected and of a high quality. The smoking is carried out with a special mixture of flours, tough woods and aromatic berries. It is excellent as a hors-d’oeuvre dressed with oil and lemon.
