The Bra cheese takes its name from the city where it is produced, Bra, and it is one of the most important Cuneo cheeses from a qualitative and quantitative point of view. There are two types of Bra: soft and tough. The soft one is seasoned for about 45 days, features an ivory paste and a light grey, smooth and elastic crust. The tough type has a six-month seasoning, the paste is of a straw colour and is slightly spicy, while the crust is tough, consistent and of a dark beige colour.
