| All these sauces are different from the other ragouts for two important peculiarities: the vegetables at their basis (carrots, celery and onions) are carefully fresh hand sliced; furthermore, they contain between 60% and 80% (deer, hare, wild boar, roe, duck, goose) of meat and do not usually contain tomato for not flattening their taste.
